Today is worse than yesterday as far as weather goes. It is zero degrees. So guess what I am making to warm my soul - stir and bake cupcakes. They are the easiest thing to make and they are no fail. What I like about the recipe is you can change up the flavor by changing the kind of instant pudding you use, type of flavoring and nuts or chips. Give it a try and I am sure you will add this recipe to your favorites.
1 3/4 c. all purpose flour
1 small box of instant pudding
2/3 c. sugar
2 1/2 t. baking powder
1/2 t. salt
2 eggs beaten
1 1/4 c. canola or vegetable oil
1/2 c. whole milk
1 t. vanilla extract
3/4 c. nuts or chips
Mix flour, instant pudding, baking powde, salt and sugar together until combined. Put aside. In a seperate bown beat eggs and add oil, milk and vanilla. Add to flour mixture just until combined. Fold in your 3/4 c. of nuts or chips. Pour into muffin tins until 3/4 full. Bake at 350 for 18 - 20 min or until toothpick comes out slightly tacky. Will continue to cook thru last minute or two as it cools. You can frost these and use as cupcakes or eat as is. I like to use chocolate pudding, chocolate chips and almond extract in place of the vanilla. My daughter likes vanilla pudding, 1/2 c. beeries and 1/4 c. walnuts in place of the 3/4 c. of nuts alone.
